There is nothing much better than some tasty eggs and toast to cure those head throbbing hangovers.
I first learned how to cook by making breakfast with my dad. These days I am no longer the breakfast lover I once was, but I remember some delicious recipes. Eggs are key to a good breakfast, but I also love a little bit of meat for some extra flavour and fat. My family usually does a friday night chicken dinner, so we always have some left over chicken for a saturday breakfast. That is where the meat in this recipe comes from.
Start off with by frying up some leftover chicken with a tsp of olive oil in a non-stick pan.
In a bowl whisk together
1 tsp of dijon mustard
1 tsp of worcestershire sauce
1 tsp of maple syrup
Once the chicken has started to get hot and brown on the outside pop some toast into the toaster.
Add the eggs mixture to the chicken in the pan.
Now cook it up like scrambled eggs, keeping to moving and cooking it all the way through.
Butter the bread, before topping it with the chicken and egg mixture.
Top it off with a bit of sliced green onion and serve it up with a nice cup of coffee.
